Regarding the benefits of butter vs. margarine, I am always amazed when Trans-fats and Hydrogenation are still attributed to margarines. Most name margarines in the supermarkets are non-hydrogenated and contain no trans-fats. AND they are recommendedf by Cardiac associations/doctors for good heart health over butter.
Butter may be pure but it is mostly pure fat and an artery-clogger. It's the first thing a heart patient is told to get of if they've had an event. Can't we get with the current status of margarine and admit it is a healthier choice as long as the labels read non-hydrogenated and trans-fat free?

No one should throw the baby out with the bathwater- it's NOT just butter or margarine we need to focus on concerning clogged arteries. Most consumers seem to stop there and forget about the junk foods they eat, the substandard diets they fill their arteries with, and the lack of a balanced vitamin and mineral, fiber, and probiotic diet they aren't getting at each meal. Margarine seemed to be the answer to justify irresponsibility for the rest of the diet. Hydrogenated oils took over more than margarine, so yes, there is more to this than butter or no butter. I just happen to select butter over margarine for the reasons I wrote in the article.
I personally believe that only recently when the truth about trans-fats FINALLY became mainstream did margarine begin to transition away from hydrogenated oils. I think that was more for profit than for health, though. But these products are still filled with chemicals and additives that are not necessary for human heart health. I am one to agree with the history of butter use from generations past; that unsalted, organic butter used in small quantities (as it should be used and as margarine should be used), is more natural for the body, and that the plethora of rancid oils in fast-food restaurants, lower-quality meats, products still using hydrogenated oils + refined sugars + white flours, just to name a few American favorites, are accumulating as the focus to what clogs one's arteries. How many people eat candy bars and vending machine foods everyday - and kids do this daily at the schools?
I choose butter. I also take niacin and a B-Complex 5 times a week to keep my cardio system clean. I work out regularly, too. But, I use butter, coconut oil and olive oil.
